This holding cabinet cooks by time and converts from cook mode to hold mode automatically to reduce hands-on tasks. Operators can adjust cooking and holding temperatures via temperature knobs. While cooking temperatures range from 200 to 325 degrees Fahrenheit, holding temperatures span between 60 and 205 degrees Fahrenheit. This system also enables users to set cook and hold times, and indicator lights provide the status of cook and hold cycles.
To hold as many as four full-size pans or eight half-size pans, the Alto-Shaam cook-and-hold oven is equipped with two stainless steel wire shelves and two stainless steel side racks with 11 pan positions spaced on 13⁄8-inch centers. Because this unit doesn’t require an oven hood or outside venting, it’s simple to install. It’s made of stainless steel, and its solid door has a magnetic latch to ensure the cabinet is closed. Its antimicrobial handle hinders bacterial growth to maintain a sanitary surface, and to maximize production output, this 191⁄8-inch-wide by 29-inch-deep by 317⁄8-inch-high unit can be stacked with another oven.
