This floor-model fryer has an oil capacity of 50 pounds. In the tank, four 30,000-BTU burners heat the oil, and underneath those burners, a cold zone catches the sediment that falls off product. This design prevents the oil from taking on a burnt flavor and ensures operators need to change the oil less often. When cleaning out the fry pot, a 11⁄4-inch ball-type, full-port drain empties the oil and collected sediment.
